Quinoabowl with sweet potato
Ingredients:
1 1/2 dl quinoa
2 large sweet potatoes, diced
2 tbsp extra virgin olive oil
2.5 dl corn
1.5 dl red kidney beans, drained and rinsed
1 cup coriander (chopped)
Salt and pepper to taste
tahini
avocado
Instructions:
1. Preheat oven to 220 degrees. Prepare quinoa according to package instructions.
2. While the quinoa is being cooked, prepare the sweet potatoes.
3. Spread the diced sweet potato on the baking sheet. Pour over olive oil, salt, and pepper.
Cook in the oven for 15 minutes or until they are soft and begin to color.
4. When the quinoa and sweet potato are ready, pour the quinoa into bowls.
5. Top with corn, kidney beans, and sweet potatoes. Drizzle tahini over and
top with coriander and avocado.
