Hi!
I want to share this super good recipe on a quinoa salad with kale & lentils, that I found HERE!
Ingredients for the salad:
- Kale (about 8 - 10 cups raw)
- 1 cup of Green beans
- 1 cup of cooked black lentils
- 2 cups of cooked quinoa
- 1 avocado
Ingredients for dressing:
- 1 cup of unsweetened almond milk or other optional milk of choice
Juice from 1 lime
1/2 cup coriander
3 garlic cloves
2 tablespoons chia seeds
2 tbsp tahini
1/2 teaspoon red pepper flakes
3/4 tsp herb salt & pepper
Do this:
1. Start with dressing, add all ingredients in a blender and mix at a high level for
about 1 minute until smooth. Pour the dressing into a jar and set aside to thicken.
2. cook the quinoa.
3. Tear kale from the stalk and place in a saucepan along with the green beans.
Steam or fry for 2 - 3 minutes until the green beans are slightly soft and the green cabbage
leaves are just beginning to fade.
4. Pour the vegetables into a large mixing bowl and allow to cool for 10 minutes.
Once cooled, add quinoa and beans to the bowl. Pour dressing over salad and stir.
5.Serve either immediately (and slightly warm) or place salad in the fridge to cool completely.
When serving, top with avocado pieces.
6. Enjoy!
