Now that it´s soon winter and Christmas, I think that it´s sometimes extra difficult to find good alternatives on simple and good Christmas recipes for us vegans that´s also gluten-free.
I thought I would share a delicious Christmas recipe on super simple chocolate and gingerbread inspired truffles thats also very easy to make!
Ingredients:
About 1.5 dl Raw walnuts or almonds
1.5 dl Oats (gluten free)
1 teaspoon Cinnamon
1 teaspoon Ginger (ground)
1/8 teaspoon Salt
10 Big Dates
1 tablespoon Water
1/2 teaspoon vanilla extract
2.5 dl Vegan chocolate (preferably also raw)
1 teaspoon coconut oil
1 tbsp Optional sweetener. (optional, depending on how sweet you want it)
Do this:
1. Combine the raw nuts, oatmeal, cinnamon, ground ginger and salt in a food processor. Mix until it becomes a crumbled mixture.
2. Add dates, optional sweetener, water and vanilla extract to the food processor. Mix until it becomes a sticky dough-like consistency. The dough should be sticky enough to pinch with your hands.
Lay out a baking sheet or plate with parchment paper on. Roll the dough into small balls and place on the baking paper.
Melt the chocolate and coconut oil mixed using a water bath, stirring until the chocolate has melted.
5. Dip each dough ball in melted chocolate. Place each truffle on parchment paper. (Tip: you can also top with something you like). Store in the fridge for 15 minutes or until the chocolate solidifies.
